Loaded Veggie Lunchbox Pasta Salad

Looking for new ways to make your little one’s lunch without having to resort to the typical sandwich? Not that sandwiches are a bad thing, heck, if I could choose, I’d probably have a sandwich for lunch everyday. But sometimes you need a little shake up, something different for size for those moods that you might want to think outside of that sandwich box. That is what this Loaded Veggie Lunchbox Pasta Salad is for; precisely for those days.

Spice up your child's brown paper bag by ditching the typical sandwich (yawn) and pack this Loaded Veggie Lunchbox Pasta Salad. So full of veggie nutrition and protein, your kid will make straight A's!

This Loaded Veggie Lunchbox Pasta Salad is just as it’s title suggests: full of tons of fresh veggies and gluten free pasta and drizzled lightly with a good olive oil and red wine vinegar. Incredibly simple to throw together either the night before (keep the veggies and pasta separated and drizzle with the dressing the morning of) or prepare the entire lunch the morning of. The hardest part about this recipe is waiting for the gluten free pasta to cook up. Sounds pretty easy right?

Gluten-Free Garden Pasta Salad

Ingredients

Scale
  • 1 c. gluten free spiral pasta
  • 1/2 c. chickpeas, drained and rinsed
  • 1/4 c. tomatoes, diced
  • 1/4 c. chopped cucumber
  • 1/4 c. bell pepper, chopped
  • 1 Tbsp. red onion, finely chopped
  • 4 black olives, sliced
  • 3 tsp. olive oil
  • 2 tsp. red wine vinegar
  • 1 garlic clove, minced (optional)
  • pinch of sea salt

Instructions

  1. Cook the pasta according to the directions on the package. Drain.
  2. Combine all the ingredients for the pasta salad together and gently toss.

    How much thyme & oregano in the dressing.
