Halloween Graveyard Salad

October 25, 2011 by Cara

The official countdown has begun:

SIX more days until Halloween!

We’re taking a short break away from all that sugar

(you guys, I’m breaking out on my back!

Am I in friggin’ high school all over again or what?? This is out of control!)

and cleansing our bodies with something simple,

healthy and oh-so easy to make.

Oh, did I mention a bit spooky as well?

Halloween Graveyard Salad

“Graveyard Starter Salads”

The perfect appetizer to serve up

at your up-coming Halloween party.

(((You *are* going to have a party aren’t you?

I mean, I haven’t been slaving

away in the kitchen for you not to, right??!)))

***By the way, If you do have a party my simple request is that you

INVITE ME!!!***

  • 3 Asparagus sticks, sliced in thirds
  • 1 carrot, sliced in 2″ pieces, and then halved (and halved again)

DIRECTIONS:

  1. Place veggie sticks on the outskirts of a flat plate to mimic a fence

Halloween Graveyard SaladYOU’LL NEED:

  • 2-3 cherry tomatoes

DIRECTIONS:

  1. Place next to tombstones as pumpkins

Halloween Graveyard SaladYOU’LL NEED:

  • 1 cucumber

  1. Slice the top 3″ of a cucumber.
  2. Thickly slice top piece into 2 “tombstones”

Halloween Graveyard SaladYOU’LL NEED:

  • 1 broccoli floret piece

DIRECTIONS:

These salads will have your guests shivering

with creepiness as they watch in fright

whether or not actual ghosts reside in their graveyard-on-a-plate.

I’m so jealous that you can get that beautiful white asparagus there—We can barely get good green asparagus here unles we buck it up and trespass on someone else’s land!

Ooooh! that would be a fun Halloween activity…

    • Cara

      October 29, 2011 at 8:51 am

I say trespass, Sue! How fun would that be?? Dress in all black, wait until dark descends…you could even tip a cow or 2 while you are out 🙂 haha

GREAT idea Cara, super creative! What are you going to be for Halloween? I am still trying to figure it out.
If I was having a party, you would be the first on my guest list 🙂 just so you know!

Oh Oh! Please say you’re going to have a party! Please say you’re going to have a party! I wanna come and I would dress up like a fortune teller–you know, like the ones you see at an arcade. And I would carry around my crystal ball (and I’d be inside a wooden box, just like the real thing) and whenever anyone gave me a quarter (or put it through the slot, really) I will give them a fortune on a piece of paper that would fall down the chute. I’d be so rich by the end of the night 🙂 hehe. Have you figured out what you are going to be???

That was a graphic used after the photo was taken :/ You can always try edible markers though, that could work. Just dab the cucumber dry before you write on it.

Oh my, this is too cute! I wish I knew some kids that I could make this for! Although I’m sure I’d enjoy it making it for myself anyway.. 🙂

I hate to say this, but screw the kids! Do it for you! haha. I’m all about celebrating holidays child-less 🙂

Originally I was going to be iced but I’ve changed my mind. I’d like to buy my plot now. Two actually, one for me and one for crazy boy. Right next to each other right under the broccoli tree. I haven’t decided what I want written on the cuke stones yet. I’ll get back to you. You are now the vegan mortician bahaha. You have a way with crudite graveyards!!
    PS candy sucks!

    • Cara

      October 25, 2011 at 5:17 pm

The vegan mortician. I actually like that! hehe. I will get working on your plot. Please give me at least 3 days advance notice of what you want written… And yes, candy does suck! blech.

Thanks for the great idea! I am definitely doing this to go with my jack-o-lantern vegan pizzas (I’ll use black olives to make the pumpkin face).

    • Cara

      October 25, 2011 at 12:28 pm

You are so welcome! I wanna see the end result with the vegan pizza-o-lanterns–how cool of an idea is that?!

love, love, love this! I have a three year old that just may eat her veggies when I make this! (may help me eat mine as well);)

    • Cara

      October 25, 2011 at 12:27 pm

Well, Jacqui, you know what they say: a salad a day keeps the ghosts away… 🙂

Nice centerpiece. Eat the cucumbers first though. Ghosts are much more fun when they are suffering from identity crises.

    • Cara

      October 25, 2011 at 10:51 am

ha! They do hate that don’t they??

  10. Brooke

    October 25, 2011 at 9:57 am

Ok, at first, I must admit, I thought the ghosts were smoke. And I thought, “Why is the broccoli on fire?” And then I saw the heads and it all made sense. I’m kinda slow… But this looks super yummy. I like the blanched asparagus as part of the fence!

    • Cara

      October 25, 2011 at 10:51 am

The broccoli actually was smoking, Brooke. Bad habits are hard to break…

        October 25, 2011 at 4:37 pm

        Bwahahaha! 😀

    October 25, 2011 at 9:48 am

so cute! I love this. Also I love the creepy little ghosts sitting on the tombstones! Well done!

    • Cara

      October 25, 2011 at 10:50 am

They were a bit difficult to photograph though–ghosts need special equipment to capture them on film 🙂

    October 25, 2011 at 7:43 am

I have never been so spooked by veggies before in my life! Good job!

    • Cara

      October 25, 2011 at 8:02 am

The vegetables will be quite pleased in hearing this…

    • Cara

      October 25, 2011 at 7:21 am

Thanks K-town 🙂 I had a feeling it would please the Halloween lover in you…

  15. Amanda

    October 25, 2011 at 6:35 am

So cute and creative! If you need someone to help you eat some of that candy so you don’t break out, I know someone who can help you…..ME!!! 🙂

    • Cara

      October 25, 2011 at 6:52 am

You don’t even have to ask Amanda, seriously. Just barge right in, take the candy and run. Please!

Way too cute. Maybe we should carve tomatoes this year instead of pumpkins… mmm… tomatoes.

I have broken out in one spot on my forehead and I’m definitely blaming it on MoFo. We’ve had dessert so many times this month that I think I am genuinely sick of sweets.

    • Cara

      October 25, 2011 at 7:24 am

I’ll carve anything that isn’t made of sugar 🙂 I’m with you, yesterday I was trying (for the life of me!!!) to figure out how to make nougat for like the 5th time, and all I kept thinking was that I never want to eat chocolate ever again!! I wasn’t a big fan to begin with but now I’m just so sick of it. Yuck! We should have a follow-up month after MoFo that is a cleanse month where everyone gives their best tips to rid of all the junk we just indulged in…

  17. Cara

    October 25, 2011 at 5:36 am

This idea would never ever have come to my mind. You’re so creative!

    I love it.

    • Cara

      October 25, 2011 at 7:01 am

All it requires is for you to stand for several minutes (more like 30) in the produce section at your grocery store and start daydreaming what alternative usages veggies and/or fruit could have. It also will require multiple strange looks from others as you stand there with a “Leave me alone, I’m really trying to think here!” look on your face 🙂 Thank you Cara!
