Gluten Free Vegan Do Si Do Cookies

I think I have only another day or so left in me for this Girl Scout cookie extravaganza and since I have been recreating every Girl Scout cookie I ever cared about it is only reasonable that I make Gluten Free Vegan Do-Si-Dos.Funny how when you are told you can never have something again because it makes you sick, you crave it all the more. It’s almost as if you create this dreamworld in your mind of what said “off limit” food really tastes like.

I say this because for the past week I have been going crazy with this Girl Scout cookies series {my own “off limit” food}. The build-up and the memory of these cookies have a bigger impression in my mind than the actual experience itself. Don’t get me wrong–these recipes are delightful and should you choose to partake in the making of them, you will be quite pleased, absolutely. However, when you are forced to make all of the varieties that you remember of your past packed into one week, you realize…they are just cookies. I have leftovers galore sitting in my freezer now. Homemade Thin Mints still sit in my freezer! Did you hear me? That has never happened. I’m afraid I believe the luster has gone…

Gluten-free Vegan Do-Si-Do Cookies

Ingredients

Scale

Peanut Butter Cookies:

  • 1 1/4 c. Cara’s All Purpose GF Flour
  • 1 tsp. baking powder
  • 1/4 tsp. sea salt
  • 1/2 c. dairy free butter, room temp
  • 1/2 c. peanut butter, creamy
  • 1/4 c. brown sugar, packed
  • 1/2 c. powdered sugar
  • 3 Tbsp. aquafaba (brine from can of chickpeas)
  • 1/2 tsp vanilla extract

Peanut butter filling:

  • 1/3 c. peanut butter
  • 3 Tbs shortening
  • 1/3 c. powdered sugar

Instructions

  1. In a large bowl, cream butter, peanut butter, and sugars with an electric mixer on medium speed for 30 seconds. Add aquafaba and vanilla and blend until just combined.
  2. Add flour, baking powder, and salt and blend until just combined.
  3. Separate dought into 2 halves. Flatten and wrap each section with parchment paper. Chill for 2+ hours.
  4. Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
  5. Roll out dough between 2 pieces of parchment paper until 1/4-1/2″ thick. Cut circles out of dough with a 2-2 1/2″ fondant cutter. Place on baking sheet.
  6. Bake for 12-15 minutes or until brown along edges. Cool on baking sheet.
  7. With an electric mixer, blend peanut butter and shortening for the filling. Slowly add powdered sugar until light and fluffy.
  8. Scoop filling onto one cookie and then place other cookie on top. Gently press down and allow to set.
  9. Best if eaten within a day or two. Refrigerate if desired.

Maybe it’s the same with most things in life. We spend so much time wishing things were as they were in the past {especially when we are told we cannot go back there again} when the reality is that maybe it’s more about what we think we remember to be the truth that we build up in our heads. Maybe our memories are best to be kept in the past. So for now, I will enjoy the moment…And when I begin to crave Girl Scout cookies, I will pull up this post and remember that I still have cookies in my freezer.

    Oooh, I wish I had the composure to go, buy myself a glass of peanut butter and keep it in my cupboard as long as it takes to try out all those tempting peanut-butter-recipes. This wonยดt take just one high-calorie “only tasting the dough” – day. Iยดm certain of that.

    Any ideas how I could prevent myself from pitching into that glass of smooth and creamy happiness ?

    You’re right…Girl Scouts are evil. Here’s the thing though: if we did get their cookies all year, we’d be rolling around and taking them for granted. (Same thing goes with those amazing sunsets and other cool things.) Human nature…so complicated

    Man, I really want to actually experience a Girl Scout Cookie – I see all these “versions” in blogs, but we have nothing like it here Down Under… another strange phenomenon from the US, no? So the Girl Scouts sell them once a year right? We have Girl Guides here, but they only sell 1 type of really boring, plain cookie – BOO. Your versions sounds like a mouth party fo sho ๐Ÿ˜‰

    You’re cookies are looking pretty bomb, Cara. I’ve been staying away from baking lately, but these almost tempted me. Almost.

    I like how you’re getting all philosophical about your cookies, too. I got wicked philosophical about this banana I was eating today – you know, I thought, “I’m eating this right now because I’m hungry. And I’m hungry because I’ve used up all of my energy. Or because it’s lunch time at work right now and I’m supposed to eat, otherwise my co-workers will insist that I have an eating disorder, but then how do I know this is really food? Who told me a banana was a food? Shit. I finished my banana”. I have endless conversations with myself like this at work.

    Oh, and by the way, Ashlae is totes a hipster. Totes.

    i love the last picture.. perfect rounds.. perfectly balanced:)) i dont know how you have the patience to make such pretty cookies.. mine are always goopy random shaped things.. coz i know i will finish half of them within the hour.. unless of course i plan to send some to someone.. then maybe i put a little extra effort:) no one likes pb in my house.. but we love almond butter.. so thats what will go in these cookies..
    i agree with frugalfeeding.. i am missing the super fun titles!

    Those cookies look so full of peanut buttery goodness! I would love to open them up and just lick that filling…followed by eating the cookie too of course! I don’t have any attachments to girl scout cookies (never heard of do-si-dos) so I was trying to think of a similar childhood treat that I remember being better than it actually was…I can’t think of one though! My sister actually just recreated a peanut butter-chocolate-rice krispie roll that our mom used to make a long time ago, and I still loved it! So I guess the key is not getting to eat that type of thing too often so that it doesn’t lose its novelty….I can see how I would get sick of it if my mom was still making rice krispie rolls every week!

      Hmmmmm, rice krispie rolls every week just might be the cure for a food that lost its luster. I really think, however, that it’s more of the “I crave it because I can no longer eat it” even though it might be something you never ate prior to realizing you have dietary restrictions, you know? There is also something about knowing how to make something at home that takes the mystery out of buying it out of the store, you know? That is, unless it’s cupcakes ๐Ÿ™‚ hehe

        I guess my comparison wasn’t quite the same as a dietary restriction! At least you’re doing yourself (and others) a big favour by coming up with homemade versions of the treats you can no longer have…that way, you’ll have so many new and better options to choose from that you won’t even crave the old ones anymore!

      It’s getting absurd because the moms are butting into the peddling. I don’t like that. I want to buy from the girls, not these competitive “stage moms.” Isn’t the whole point in selling cookies to teach these kids how to run a business? *shaking head* The young whippersnappers of these days have no idea of the value of earning a dollar the way we did in our time… haha!

    Love that last photo, lady! And I know what you mean about too much of a good thing. If I have to eat another bowl of soup again, I might lose it. In the South they call it “being foundered” on something. As in, “I made three different kinds of soup this Saturday and after all the taste testing I got foundered on soup.” In the dictionary, as a transitive verb, it means “to disable an animal especially by excessive feeding.” So there you go. We’re foundered. Also, I may have developed verbal diarrhea…

    All those G.S. cookies in your freezer are making me full, which as it happens, is a darn good thing, since my kitchen is still off limits. Plus, you really don’t have to make up silly titles for FrugalFeeding, just tell her to read the directions. I drop letters while typing too but I think you were up for a 2 a.m. feeding. “With an electril mizer” I think it we should enter it into Webster’s and let Frugal define it. Just remember ‘sod’ ‘bugger’ and ‘bullocks (sp?) are already taken. Oh, when shall I send Al out to the mailbox for my cookies? Cara? Cara? helllooooo, Cara?

(Biscuits, Nick) Plus you must REALLY be tired if you’re leaving because it’s Your House! Nick can get as British as he likes. Talk about creative word-smithing! I love them, well, except when I had to explain them to my 13 year old niece whilst watching “4 Weddings and a Funeral.” Why do all those creative terms mean the same thing anyway?

    Yeah, those damn Girl Scouts are such drug pushers they forced me to buy 15 boxes for Thom. NO ONE CAN FORCE ME TO DO ANYTHING. But they did. Somehow. In their little green uniforms and stupid smirks on their faces, like.. we’re totally going to get this lady by telling her how much her (ex)boyfriend will love her if she buys him all of these cookies. I really wish they’d just go away already, becuase I’ve been hiding in my house for a week.

    And in lighter news, these cookies look divine. Super huge cookie wafers, which I am digging. I never cared much for cookie fillings. Or anything normal people like.

    those cookies look so amazing. i love how thick the cookies are..they look so perfect.

    i completely agree with your post. i used to look back on things a lot, but i’ve realized over the days/months/years that the present is where i want to be. the decisions i’ve made during my entire life have brought me here. and it’s makes me happy ๐Ÿ˜‰

      I think you are right. After a couple of months of forgetting that they are in there, I will embark upon them and shake my head, not understanding what I was saying about them losing their luster…thanks for the reminder ๐Ÿ™‚

    Love it. You are SO right. It’s when you are told no that you say, “Um YES!”
    Perhaps it’s not such a bad thing to have some frozen treats stored away. ๐Ÿ™‚
    These look really tasty it’s a crying shame peanuts don’t like me. Will have to think about how I can make them Nina friendly.

      Nina-Can you have other nuts? Maybe a different nut butter if so, or what about sunflower seed butter? We’ve used cashew butter in place of pb for some recipes and I can’t tell the difference.
