Sun Butter and Apple Jack-O-Lanterns

I have taken the classic apples and peanut butter snack into my kitchen lab, tweaked it just a smidge, and created a monster for those with a nut allergy. I call them Sun Butter and Apple Jack-O-Lanterns (cue evil laugh). Anyone else get the image that I’m sitting on my couch with wild hair and crazy eyes, laughing like a crazy moron? Well, I haven’t washed my hair today and I do have an eye twitch so I guess it’s partially correct.

This is not to discuss my personal hygiene habits here so let’s move on and talk about these ADORABLY scary apple slices. Meh, I don’t even want to talk about them, I just want to eat them… Join me? They are the perfect snack for afterschool, upon waking in the morning, or even for that moment you need a sweeter treat. If you can eat nuts, try this with peanut or almond butter and add a fun spider to the apples with a nondairy chocolate chip and melted chocolate for the legs.

Sunbutter & Apple Jack-O-Lanterns

Ingredients

Scale
  • 1 apple, sliced from top to bottom
  • 1/4 c. Sun Butter
  • handful mini nondairy chocolate chips for spiders (optional)

Instructions

  1. Using a small, sharp knife, carefully cut Jack-O-Lantern faces into the apple slices.
  2. Coat with Sun Butter. Decorate with “spider” chocolate chips (optional).

      Hi June! Sun butter is sunflower seed butter. You can make it at home or find it at any health store. I got mine at Trader Joes 🙂

    Hmmm…wonder if the girls would try these? They aren’t big fans of sunbutter but I bet I might be able to add some chocolate chip spiders to entice them?????

      You know, I’m not a big fan either. I got mine at Trader Joes at it’s full of sugar and taste kinda gross to me. If I’m eating nut/seed butter, I don’t want anything extra in it. Just the nuts/seeds and a touch of oil if needed. I remember making my own at home once and it was much better. Heck, just give them some nondairy chocolate chips and call it a day 🙂
