  1. Poke several holes into the sweet potato with a fork. Place on a place and cover, microwave for 8-10 min or until soft. Allow to cool before taking the flesh out of its skin.
  2. Place everything into a high-speed blender and blend until completely smooth. If your pudding needs more liquid, add 1 tablespoon of dairy free milk at a time.
  3. Either place into to-go pouches (if you do so, it will fill 3 of them) or small, individual-sized mason jars.
  4. Refrigerate until ready to eat.
