Pancake Fireworks

When it comes to the 4th of July, there are two things that strike a chord in me (aside from delicious BBQ food): “The Star Spangled Banner” and Fireworks. It never fails that I cry at both of them every single time. I don’t know what it is but it is about them but that song and a good set of fireworks can always touch my heart by getting the waterworks going. Which is why I wanted to recreate these Pancake Fireworks I saw on Betty Crocker as an homage to the light display that occurs in the sky on every Independence Day.

Topped with the freshest and brightest of fruit, not only are these Pancake Fireworks celebratory and festive but they are also healthy. The perfect breakfast option to say, “Hey America, happy birthday. Have a pancake.”

Maybe my Pancake Fireworks don’t look as much like fireworks as they do, well, like budding flowers, but they are still pretty none the less and I happen to love their beautiful reds and blues. I made a simple pancake by throwing together 1/2 c. flour + 1 tsp. baking powder + 1 Tbsp. granulated sugar with 1 Tbsp. oil + 1/2 c. dairy free milk. You can also use this buckwheat pancake recipe or my perfect gluten free vegan pancake recipe.

Description

Inspired by Betty Crocker’s Pancake Fireworks, this breakfast idea is the perfect way to celebrate the 4th of July!


Ingredients

Scale
  • 1 recipe buckwheat pancakes (or this pancake recipe)
  • 18 strawberries, cut into 5 slices
  • 36 blueberries

Instructions

  1. Follow this recipe for the pancakes or use your favorite recipe.
  2. Place the sliced strawberries as assembled in the photos below. You will need a total of sliced strawberries per pancake.
  3. Add 6 blueberries into the middle of each pancake.

Now you can have your own fireworks display on a plate of pancakes. I know, you never knew that was possible but it is! Bring the tissues because you might break out into tears over how beautiful your breakfast just might be. Pow! Boom!
