Rainbow Fruit Salad Bagels

Ingredients

Scale
  • 1 gluten free bagel (or use this homemade recipe)
  • nondairy cream cheese (or use this homemade cashew cream cheese recipe, omit the garlic, herbs, & salt, and add maple syrup or honey to sweeten)
  • 1 strawberry, sliced
  • mandarin orange slices
  • 1/2 kiwi, sliced
  • handful blueberries

Instructions

  1. Toast your bagel (I used Schar’s gluten and egg free bagels from the store).
  2. Spread the nondairy cream cheese over the bagel.
  3. Assemble the fruit in the fashion of a rainbow.
  4. Drizzle with honey or honey substitute (optional).
