This one is for you, my stellar vegan readers. Wait, you non-vegans, don’t you dare go away! You will equally love this too but this is specific to my friends who do not eat eggs (so that really expands past vegans, but you get what I mean). The thought occurred to me while happily on my Easter Pinterest board, “What could I create for vegans that is the equivalent of Easter Eggs?” I wanted something fun and festive that one could decorate the way you dip eggs into dye and swirl them with color. I tossed around several different ideas but most (okay, all) involved sugar and to be honest, I wanted to branch away from making a habit out of creating all sugary ideas. I am a changed woman, after all. So I looked around and saw gluten free bread in my fridge and instinctively pulled it out.
I cut those slices into egg shapes with a cookie cutter that I had stashed away for this moment. And I then started to grab for veggies left and right. Everything and anything I could find.
I started to slice those babies up real thin. I already knew where I was going with this so I reached for the hummus, slathered it onto the bread eggs and began decorating my very own Easter Egg Hummus Toasts. I had no plan of attack at this point, just to put the sliced veggies wherever I saw fit. I began cutting the cherry tomatoes and noticed that it was looking like bunny ears to me and about died from adorableness when I placed it on the top of the egg and saw in my mind a hummus bunny.Print
