I just wanted to send a huge thank you your way for your beautiful site and invaluable information you provide; I cannot express enough helpful these resources have been.
I am a pastry chef and cake designer based out of Norway and it is amazingly difficult to scrape together enough information to convert or create recipes using gluten free and/or vegan options for clients. The information provided on your site allows me to have a greater depth of knowledge about ingredients and techniques that are generally just a side notes in classes and books.

My son is allergic to rice, can I replace that with something else to make this all purpose blend rice free and use in your recipes?
Is there such a thing as a recipe for corn syrup-free marshmallows or a place to purchase them in Canada? I have a severe allergy to corn. Love your site!
Hey Elle, have you heard of this new way of making marshmallows or any ingredient resembling it? Google “Aquafaba” and you will find several recipes. I am sure that they are free of corn syrup. If not, you can try replacing it with brown rice syrup 🙂
Wow! That’s all I can say. Thank you so much. Vegan gluten free (I was diagnosed with EOE yesterday) looks tough. I don’t eat meat or dairy but the thought of having to cut out soy, gluten and everything else was stressing me. Can’t wait to start cooking your gorgeous recipes. Thanks 🙂
