- 2 large sweet potatoes, washed and patted dry with several fork punctures
- 1 can black beans, rinsed and drained
- 1/2 lb. cooked seasoned turkey meat (or use vegetarian “meat” for a meatless option)
- 1/2 c. corn kernels
- 1 avocado, mashed
- minced onions
- shredded lettuce
- chopped cilantro
Either bake your sweet potatoes in the oven at 400 degrees for 30 minutes or until tender OR microwave for 10 minutes. Allow to slightly cool.
Slice each sweet potato into halves. Fluff with a fork.
Either place all of the toppings in small bowls and arrange for a DIY sweet potaco bar (see what I did there?) or just add the toppings to each sliced and fluffed up sweet potato half and serve.
