Taco Stuffed Sweet Potatoes

An easy and healthy 30 minute dinner option using whole ingredients, these Taco Stuffed Sweet Potatoes will have your family filled up and happy tonight! It’s a new way to serve up Taco Tuesday, using sweet potatoes instead of tortillas. Welcome 2019!

If you’re anything like me, you’re constantly looking for new dinner recipe ideas that are quick, nutritious, and not lacking in flavor for your family. I don’t have the time as I used to spend countless hours in the kitchen on dinner so it needs to be fast, like 30 minutes or less fast, but still taste as good as it would if I spent 2 hours making it. Enter these Taco Stuffed Sweet Potatoes.

All you need to make this effortless dinner is:

  • sweet potatoes
  • black beans
  • meat filling of your choice (vegetarian or not)
  • corn kernels
  • avocados
  • salsa
  • onions
  • shredded lettuce
  • cilantro

Basically anything you would stuff a tortilla for a taco is exactly what you want for these. The sweet potato now serves as your tortilla for a nutrition-enhanced meal!

Taco Stuffed Sweet Potatoes

Ingredients

Scale
  • 2 large sweet potatoes, washed and patted dry with several fork punctures
  • 1 can black beans, rinsed and drained
  • 1/2 lb. cooked seasoned turkey meat (or use vegetarian “meat” for a meatless option)
  • 1/2 c. corn kernels
  • 1 avocado, mashed
  • minced onions
  • shredded lettuce
  • chopped cilantro
  • salsa

Instructions

Either bake your sweet potatoes in the oven at 400 degrees for 30 minutes or until tender OR microwave for 10 minutes. Allow to slightly cool.

Slice each sweet potato into halves. Fluff with a fork.

Either place all of the toppings in small bowls and arrange for a DIY sweet potaco bar (see what I did there?) or just add the toppings to each sliced and fluffed up sweet potato half and serve.
