Jelly Bean Easter Egg Treats

Easter mornings were filled with magic and wonder like Christmas was in the Fork & Beans’ household. Remember when I told you about my mom’s love for celebrating holidays? Easter was no exception. I remember waking up to Easter baskets filled to the brim with fake green grass and candy. Good lord, the amount of candy! You could always count on a giant chocolate bunny, arts and craft items, and tons of plastic eggs galore stuffed with jelly beans. The best was when the eggs were actually filled with dollar bills for our very own version of an egg hunt in our living room. Nothing like the Easter Bunny filling our little pockets with money. ((Thanks mom and dad)) These Jelly Bean Easter Egg Treats are an homage to my childhood, to my mother, and to all the jelly bean lovers out there who haven’t been able to eat them due to their food restrictions but now can, thanks to Surf Sweets. 

Turn your brown rice cereal treats into Easter Egg Treats and stuff them with Surf Sweets jelly beans for a fun holiday twist!

Don’t be fooled, these Jelly Bean Easter Egg Treats are actually easy to assemble. Keep in mind that you need to work somewhat quickly before the brown rice cereal treats completely set so you can do 1 of these 2 things: 1). Make the mixture in small batches so there is less time that the treats have to set; or 2). Work in pairs. Slap an apron on your loved one and put them to work!

Jelly Bean Easter Egg Treats step-by-step guide:

Steps 1 and 2: Take approximately 1/4 c. of the treat mixture and place down on the counter on top of a piece of wax paper. The mixture at this point should not be too sticky to work with. If so, allow to cool another minute. Form into an egg shape with your hands.

Steps 3 and 4: With a sharp knife, cut the egg in half. Hole out the middle of each half with your thumbs. Make sure it is large enough to fit the jelly beans inside.

Steps 5 and 6: In one half, place the Surf Sweets jelly beans inside. Close up the egg and gently press together until the egg is perfectly formed again.

These jelly beans are free of the 10 most common allergies (including dairy, soy, and gluten) and are made without artificial flavors & colors, gelatin and corn syrup. Easter Eggs Treats with Jelly Beans

Ingredients

Scale
  • 3 c. gluten free brown rice cereal
  • 2 c. marshmallows (use gelatin free, if vegan)
  • 1 Tbsp. nondairy butter
  • 1 packet Surf Sweets jelly beans

Instructions

  1. In large saucepan melt nondairy butter over low heat. Add the marshmallows and stir until completely melted. Remove from heat.
  2. Add brown rice cereal and stir until well coated.
  3. Using greased hands, firmly press 1/4 c. of the mixture into an egg shape with your hands. If you need extra help, you may use a large break-apart plastic egg as a mold. Just make sure you grease it before you place the mix inside.
  4. Slice the cereal egg in half and hollow out the centers of each half using your thumbs. If using the plastic eggs as a mold, remove and place on a piece of wax paper.
  5. Stuff with Surf Sweets jelly beans and close up the egg by gently pressing together until the egg is perfectly formed again.
  6. Cool completely.
