Chia Jam (using Juicy Juice)

One of the things that I love to do is find new ways to use what I already have on hand. Especially now that I have a kid, I am understanding how many items in my pantry and fridge are half eaten, or with just one bite taken out of it. And because I hate the idea of wasting food, it forces me to find creative ways to take what has been halfway consumed and reinvent it into something new. That’s why when I had leftover Juicy Juice 100% Juice, Fruit Punch Flavor, I knew I had to try it in a chia jam. And not just any chia jam, I wanted to created four different flavors to see if it worked in each one: Peach, Strawberry, Blackberry, and Mixed Berry.

The consensus?

STELLAR.

This chia jam is unique because the liquid and sweetener is made from Juicy Juice, which is made from 100% real fruit juice. I’m such a fan of Juicy Juice (I literally have a lifetime supply in my pantry!) because it has no added sugars and allows the fruit to burst through its juice. I knew it would be the perfect liquid substitution for this chia jam recipe, which only requires three ingredients:

  1. Juicy Juice 100% Juice, Fruit Punch flavor
  2. frozen fruit
  3. chia seeds

 

Using Juicy Juice as the star ingredient, this chia jam doesn’t need any sugar added. It simply relies on the bursting fruit from the juice to sweeten the jam. It’s the perfect snack addition for your kid that you can feel good about.

Ingredients

Scale
  • 3/4 c. Juicy Juice 100%, Fruit Punch Flavor
  • 2 c. frozen fruit
  • 1/4 c. chia seeds
  • 1–2 Tbsp. maple syrup (optional)

Instructions

  1. In a medium saucepan, bring the fruit punch and frozen fruit to a light boil. Heat through for 2 minutes.
  2. Using an immersion blender, blend the fruit punch and fruit until almost smooth. Keep a few chunks in if you like. If you like your jam to be even sweeter, stir in the optional maple syrup.
  3. Remove from heat and pour liquid into a Pyrex cup.
  4. Slowly whisk in the chia seeds until evenly incorporated.
  5. Pour into an air-tight jar and allow to cool for a few minutes without the lid on. Chill in the fridge until it sets.

The best part? Not only is this a great spread jam you can use on your toast for breakfast but you can also place 1/4 cup of the chia jam into the bottom of a kid-safe jar, fill it up with 1/2 cup plain yogurt along with granola, and now you have a Fruit-on-the-Bottom yogurt cup that keeps nicely in your kid’s lunchbox for a satisfying lunch or snack.

    Have you tried to water bath can the chia jam?
    I’d like to make some for my grandchildren but I don’t want to waste the ingredients and try it myself.
    Would you please try one of your finished jars. Even if it doesn’t set, it remains a refrigerator jam anyway!
