Healthy Santa Pancakes

Breakfast is served! Using Simple Mills’ Pancake & Waffle Mix, these grain free Healthy Santa Pancakes are the best way to spread holiday cheer. So get your stoves started, there’s a new healthy Santa in town and he is taking names. I hope I’m on his GOOD list this year…

Recently I have made an effort to clean up my diet (read: I have stopped drinking and eating out as much). I’ve been trying to just keep it simple and keep it at home for the most part because I have found it has been the most beneficial for keeping clarity in my head (after my son was born, I went through a mild yet rough bout of postpartum depression that I have been able to tame with my diet, weight lifting, and yin yoga/meditation). Now, I’m not one for labels or eating a certain way anymore so I couldn’t tell you exactly how it is that I eat, I just know that I go with my gut (literally) and try my best every day to nourish my body as I see fit. And yes, sometimes that includes ice cream and wine. And especially pancakes from Simple Mills. Made with almond flour, arrowroot powder and coconut sugar, I love the simplicity of ingredients and how hearty and incredibly delicious they truly are!

Naturally, I turned their amazing pancake batter into the most festive, most holiday-themed breakfast I could think of: Healthy Santa Pancakes! Using fresh fruit for his face and a cashew nose, this Santa on a plate is ready to impress your family. Made with nothing artificial, nothing processed, and each ingredient is picked with purpose, these are pancakes that you can feel good about serving up to your family!

Ingredients

Scale
  • 1/2 c. Simple Mills Pancake & Waffle Mix
  • 1 egg
  • 1 Tbsp. milk (or non dairy milk)
  • 2 tsp. oil (avocado, coconut or grapeseed oil)
  • 10 strawberries, sliced into 4s
  • 1 large banana, sliced
  • 4 blueberries
  • 2 cashews
  • 2 raspberries

Instructions

  1. Make the pancakes according to the box, creating 2 big pancakes.
  2. Place the sliced strawberries for the Santa hat first.
  3. Add the banana beard next.
  4. Place the eyes, nose, and mouth on the Santa face.
  5. Serve immediately.
