Ho ho ho, Healthy Claus here to stuff your stockings full of fresh veggies, beet chips and hummus so gear up! Get those cauliflower florets out–it’s Santa Hummus Dip time.
What better way to celebrate the season then to create this ultra easy-to-make dip for your next holiday party? Let’s be real, with all the cookies, cakes and chocolate you are going to endure this season (read: already are enduring), you at least need a few dishes that are not only festive but still good for you. Heck, whip it up for lunch, eat it in private, and laugh like a ridiculous child as you pop each cauliflower whisker hair into your mouth. To each his own.
- 1 c. store-bought hummus
- ½ c. beet chips
- 1 mini yellow bell pepper, bottom sliced
- 1 mini red bell pepper, bottom sliced
- 1 olive, sliced
- cauliflower florets
- Place the hummus on the plate first.
- Layer with the cauliflower beard.
- Layer with beet chips Santa hat.
- Create the face from the sliced olive and bell pepper.
It almost seems silly to include a recipe for this just because it’s simply about layering the beet chips, cauliflower florets and veggie face on top of the hummus. Feel free to use more or less than I suggest, it’s really up to how many people you are feeding.
Here’s to making the Santa’s Nice List this year…
