No-Bake Peanut Butter & Chocolate Cookies

The Fork & Beans Advent Calendar:

Brooke, over at Crackers on the Couch,

had this fabulous idea to do the

“12 Days of Christmas”

Cookie Countdown on her blog.

So when she asked me if I would de-glutenize and veganize

her amazing cookie recipes and post alongside with her,

there was no way that I could say no!

So without further ado,

allow me to warm up my vocal chords:

“me me me me me me meeeeeeeee.

do re me fa so la ti do.

mymotherlikesm&ms”

Okay, here we go:

*give me a C chord please*

It was snowing during the photo shoot…

This was the first time I have ever made

a no-bake type of cookie

and I must say that this is my kind of cookie.

The fool-proof, lazy person’s cookie.

You cannot go wrong with the Peanut Butter Delight!

The trick is simply to not eat all of the dough

from the saucepan.

I think I barely had enough to make a dozen. 

Makes 2 dozen.

    You could substitute quinoa flakes instead of the rolled oats for a gluten free version.

      Be careful though, Lysa! You *will* find yourself eating from the saucepan to the point where you won’t have much left to form as cookies 🙂

    i love non bake cookies too.. quick and edible at any point during the recipe!:D.. love those chunky chewy looking cookies! and love the idea of 12 days of cookiiieess!

    What a GREAT idea! Lucky for me I can’t eat oats or I’d be even fuller than I am from the Buckwheat Pancakes I just ate. I’ve never, ever cooked a pancake through its middle and a 2 year old can do that. Your good Karma must be rubbing off on me. Can’t wait to see what you two have in store for us tomorrow.

    THESE LOOK PERFECR! And no bakes are my kind of cookie, too. I’ve been sitting on a recipe for them from my old blog, but I’m too lazy to make and photograph them – am I the epitome of laziness, or what? That, and I always eat the entire batch at once.. which is just terrible.

      You and your laziness. Either you really *are* the epitome of laziness or you are being hard on yourself. I’m gonna go with the latter, seeing that: a). you work; b). go to school full-time; and c). still manage to do amazing things on your blog… Sounds like the opposite of laziness to me. Don’t make me come back there and kick you in your shins…

    No bake cookies are the best! These are right up my alley – peanut butter, chocolate, easy…I don’t need more to convince me to make these!!!

      Hi Katharina! I use Picnik.com (I bought their yearly membership) which gives me access to all sorts of fonts. But the one you like is called “Love Ya Like a Sister”. It’s the best $30/year I have spent! 🙂
