Dessert Nachos

April 11, 2012 by Cara

This recipe will make you do a double take. Just when you think you know what it is, you realize your eyes are playing tricks on you. It’s the perfect April Fools Day dessert. What? you ask. Dessert? But these are clearly nachos. It’s a mound of crispy chips, gooey melted cheese, tomatoes and onions, garnished with cilantro. At least that is what I want you to think they are. Take another look. These are actually Dessert Nachos. Dessert. Yup. Everything in this dish is sweet.

Dessert Nachos - Fork & Beans

Take a closer look. Do you see the gluten-free cinnamon sugar chips? What about the tomatoes? Strawberries. That’s right, that’s jicama not onions in that fruit salsa. And the cilantro? Basil. The perfect topping for a fruity dessert.

I bet you can’t guess what that orange stuff is {or maybe you can, but I double dog dare you to guess}… Find the answer here.

You slay me! Absolute kudos on the ingenuity 😉 I LOVE my desserts to have a crunch as well as a fresh element to them and this is perfect. All we need now is some chocolate…you could make a chocolate “bean dip” 😮

DON’T. Stop with the silly titles :D. No, don’t – I do so love them. Hmm, I appear to have developed a split personality! How unfortunate. Yet another great play on food!

Cara you are so BRILLIANT! This post made me smile so big. I will definitely be making these sometime. It’s like a brain twister just trying to look at them and think sweet, not savory – but they sound delicious!

    • Cara

      April 12, 2012 at 8:21 am

They really do mess with your head, it’s true…until you start eating them. Oh goodness! They are so good.

Ha amazing! You are too cute and these nachos look amazing and totally convincing. We went to a Mexican restaurant in San Fran last summer that had smores nachos for dessert, with cinnamon and sugar tortillas, mini marshmallows and chocolate, they brought a torch out with them and torched them right at the table. So funny. Too bad they were flour tortillas and I couldn’t partake in the fun. These however are downright brilliant!

      April 11, 2012 at 8:22 pm

Thanks Beth! You are so sweet 🙂
And S’mores nachos? Now that is something I could scarf down in a heart beat! Anything S’mores immediately steals my heart. As well as San Francisco.

You know why I love this post? (Besides the fact that it’s yummy and you made it, obviously.) My Mom’s handle on ICQ like a bazillion years ago was “Nachomama.” It’s nice to think of her and you at the same time. 🙂

    • Cara

      April 11, 2012 at 3:38 pm

The “Nacho cheese” {not your cheese} joke was always a classic in my book as a kid. I *had* to do it 🙂

Brilliant, Miss Cara.Just when I think you couldn’t get any more brilliant, you do this 🙂 So what are we having as an appetizer?

        • Cara

          April 11, 2012 at 3:39 pm

That would be a bit over the top, eh?

          • Brooke

            April 11, 2012 at 4:07 pm

Over the top, but much more delicious than deep-fried beer, which is apparently a thing now…

          • Cara

            April 11, 2012 at 4:11 pm

Wait one second. You mean to tell me that there is a new trend out there that takes beer and fries it??? This just might be my year after all…Call me crazy but that sounds soooo good.

          • Richa@HobbyandMore

            April 11, 2012 at 6:58 pm

oh yes, i heard that too.. deep fried beer. meh

Gah, you are too adorable. These look amazing! Dessert nachos…. I am just sitting here staring at my screen for too long imagining how delicious they taste. Mmmmm.

No go bake some cookies! Now!

    • Cara

      April 11, 2012 at 3:24 pm

Can’t you tell I’m stalling? I sitting here with this horrible sinus headache and I just know doing something else {ie: making my award winning cookies for Baker Bettie} besides thinking about it will help. But have I gotten up? Noooooo. I want a nap 🙂 xo

      • Baker Bettie

        April 11, 2012 at 3:57 pm

Well geez. There you go making me feel all bad for you and stuff. For God’s sake, go take a nap woman!
