Mother’s Day. Oof, this is going to be a rough week but I’m as ready for it as much I can be. I actually made these Mothers Day Breakfast Toasts for Gluten Free Living Magazine’s 2016 spring issue (and a month before my own mom had her brain aneurysm), so forgive me if I am a bit off in this post. All I will say is that if you are a dad who is in need of getting your kids to make an easy and fun idea for your wife OR you are a mom yourself and want your kids to make you your very own self portrait via gluten free toast, then this is your edible craft!
This is a really easy concept to put together so there isn’t a recipe listing for it. All you need is:
- gluten free toast
- spread of your choice (dairy free cream cheese, peanut butter, hummus, nut free nutella–you name it!)
- scrambled tofu “eggs”
- sliced veggies
- fruit and berries
Depending on your mom, you will use the spread/garnishes according to her skin color and hair. Use that gluten free toast as an empty canvas to capture the woman’s face you love and adore via breakfast. It will be a meal she will always remember. If you can’t find a good gluten and egg free sandwich bread at your local store, you can always make this recipe or even this highly-rated yeast free recipe. For a good dairy free cream cheese recipe made from cashews, you can try this cashew-based Garden Herb Spreadable cheez.
