Lunchbox Black Bean Quinoa Salad

Such an easy recipe to throw together (and in just a matter of minutes) with an incredible pay off when your kid gives you 2 thumbs up for their lunchbox menu. SIX ingredients makes up this simple Lunchbox Black Bean Quinoa Salad: chock-full of protein from the black beans and quinoa, loaded with veggies and topped off with a great lime flavor. This is a meal that gets even better the next day so making it the night before can be a great option! 

Such an easy recipe to throw together in a matter of minutes, yet what a pay off when your kid gives you 2 thumbs up for their Lunchbox Black Bean Quinoa Salad.

The options for this recipe is limitless. You can add more veggies that your kid might like to this Lunchbox Black Bean Quinoa Salad or even take out the ones that she doesn’t like. If cilantro isn’t his thing, simply take it out. This recipe makes 2 servings which means it’s perfect if you have 2 lunches to pack or save the other serving for another day. Easy peasy!

Black Beans Quinoa Salad - Fork & Beans

Black Bean Quinoa Salad

  • Cook Time: 15 mins
  • Total Time: 25 mins

Ingredients

Scale
  • 1/2 c. dry quinoa
  • 1/2 can black beans
  • 1/2 c. corn
  • 1 medium tomatoes, chopped
  • 1/4 c. red onion, minced
  • 2 Tbsp. chopped cilantro

For the Dressing:

  • 1 Tbsp. lime zest
  • 1 Tbsp. olive oil
  • 2 Tbsp lime juice
  • pinch sea salt

Instructions

  1. Cook quinoa with 2 c. water. Boil over low heat, covered for 15 minutes or until water is completely absorbed.
  2. Whisk together the dressing.
  3. Once quinoa has slightly cooled, mix the beans, veggies, onion, and cilantro into the quinoa. Gently toss in the dressing.
