Raw Fudgy Brownies

October 17, 2012 by Cara

Put your phone down, step away from your computer…no wait! Don’t do that, you won’t be able to read what I am going to say. I take it back, come back…This is going to require all of your attention. Are you ready?

MAKE THESE. NOW!

Okay, now take your computer with you into the kitchen, get all of the necessary ingredients out and whip up a batch of your very own raw fudgy brownies. I swear on all things Halloween, if this is the very first raw recipe you ever try, so help me God, you will wonder why you haven’t been eating raw desserts up to this point.

Okay, enough of my yapping, time to fake bake, friends… GO!

Raw Fudgy Brownies Recipe

{Raw Vegan} Gluten, egg, dairy, and refined sugar-free

Makes 16 Brownies

INGREDIENTS:

  • 1 c. cashews, soaked for 2 hours
  • 1 c. macadamia nuts, soaked for 2 hours
  • 1 c. almond or oat flour
  • 1/2 c. raw cacao powder
  • 3 Tbs walnuts
  • 2 medjool dates, chopped
  • 2 Tb agave or maple syrup
  • 2 tsp coconut oil
  • Chocolate Ganache Recipe (see below)*
  • cacao nibs (for topping)
  • Walnut pieces (for topping)

DIRECTIONS:

  1. Mix the cashews, macadamia nuts, and walnuts in a food processor until crumb-like. You might have to do this in 2 batches, depending on your processor size.
  2. Add the remainder of ingredients into the processor and pulse until a smooth dough forms.
  3. Line a 8×8 pan with wax paper. Place dough in pan and with hands, pat down until dough forms into pan.
  4. Top with raw chocolate ganache. Immediately cover with cacao nibs and walnuts.
  5. Chill for 10 minutes.

*Raw Chocolate Ganache Recipe:

  • 2/3 c. raw cacao powder
  • 1/3 c. agave
  • 1/4 c. coconut oil, melted
  1. Blend together until smooth.

Oh my goodness, this recipe looks amazing! I have never “done” raw before, but am going to try these this weekend. Hope my store has medjool dates (I live in a food desert and usually have to order ingredients like this). Keeping my fingers crossed!

Keeping my fingers crossed for you too, Jennifer! I just made another batch of these bad boys yesterday. The bf ate, no devoured, all of them last week (and he isn’t a sweets person either). They are sooooo good!

This looks really good though I’m not keen on the use of agave or maple syrup. I might try dates or honey. I know honey not vegan but I do use it. Also hoping to get some hives soon so I would know just how lovingly the bees were cared for.

    • Cara

      October 25, 2012 at 8:10 am

That is such a great idea, Georgina! I think when it comes to diet, you have to do what works for *you* and so if honey is something you are all about, so be it! I personally have no problem with it either (although I am not exactly a vegan at all so of course I would be)–ha.

I almost thought I read “time to fake and bake, friends..” and I was little worried that this whole raw thing was going the wrong direction…either way it was funny. You know what I love about this whole raw thing and you? Everything you are posting is good for you. You’ve got all the good fats in there, Omegas, anti-oxidants – ALL while making it fun and creative. Love it Cara and love you! xo
