Easy Vegan Fudge

EASY vegan fudge….

5 simple ingredients creates the tastiest vegan fudge.

This fudge is decadent. It’s rich. It melts in your mouth. Need I say more? And it’s only 5 ingredients (not counting the nuts because I know some peope don’t like them…shame!)

The easiest vegan fudge you will ever make!

Now, don’t get held up over the fact that coconut cream is used in this recipe. I know it only makes sense that it would taste ooey-gooey coconutty…but I swear it doesn’t. So if you don’t want your fudge tasting like a Mounds Bar, you are in luck. The richness of the chocolate blends perfectly into the coconut cream and you cannot even taste it.

Easy Vegan Fudge

Ingredients

Scale
  • 2 c. nondairy chocolate chips
  • 1/2 c. coconut cream, canned (I buy mine at Trader Joe’s)
  • 1/2 c. nondairy milk
  • Dash salt
  • 1 c. chopped nuts, optional (or more!)
  • 1 tsp vanilla extract

Instructions

  1. In a heavy saucepan over low heat, melt chips with coconut cream, non-dairy milk, and salt. Remove from heat. Stir in nuts if desired and vanilla.
  2. Spread evenly into wax paper-lined small square pan. Place more chopped nuts on top if desired.
  3. Chill 2 hours or until firm. Turn fudge onto cutting board, peel off paper and cut into squares. Store covered in fridge.

    I just made the chocolate coconut vegan fudge. i used lilys dark chocolate chips. And used almond milk and it came out perfect. It was very delicious.
    Creamy and dreamy.

    With all of the problems of not having it solidify enough, I was wondering if you could add maybe 2 Tablespoons of coconut oil to help it? I know that coconut oil will solidify when it’s cooled anyway. This sound simply divine. I will have to make some soon!

      You definitely can Luna! However if you get straight up cream of coconut in a can, it shouldn’t be an issue unless: 1). It’s a bad can (it happens; I’ve had a problem with that but very seldom) or 2). It’s not 100% pure coconut cream. I say adding an extra scoop or two of coconut oil couldn’t hurt πŸ™‚ Good luck! xo

    does the can of coconut cream need to be chilled? i’m confused, since it boils anyway.

      No, the recipe doesn’t say it has to be chilled before boiled.

    Hi! I made these last night and they are very delicious but a tad smooshy. I omitted nuts but used the exact same trader hoes ingredients. I did shake my cream first. Do you think that is my problem? Should I not shake the can? I want to make these for my sons birthday party but they aren’t hard enough to do that. Help please!!

      Did you buy coconut milk or coconut cream? If you got coconut milk then shaking would definitely make a difference. But if you got coconut cream… I don’t know!

      Mine ended up more like frosting and were pretty messy, although I ate them all anyways.

      Hi Jenn! Sorry to hear that they didn’t get firm. Truth be told, the coconut cream (not milk) should pretty much completely harden so even if you did shake it wouldn’t matter. I typically buy several cans from TJ’s and once I get home I throw them into the fridge so when I need them they are already set. The coconut cream has less water than the coconut milk so the chilling process allows for it to really set and become firm. Try giving the chilling process for the coconut cream in the can and/or the fudge setting in the fridge a little more time then you originally did. Hope that helps! xo

    Hi,
    I seem to be the only person this didn’t work for. It didn’t set and its been in the fridge over night.
    It tastes divine, but not set enough.

    Was trying to think of how I could rescue it, maybe adding 1/4 cup sugar and 1/4 cup nut butter to it?
    Would really hate to waste a batch

      Did you use coconut cream or coconut milk? That’s the only thing I could think of that could cause it to not set. If you used coconut milk (without doing the fridge trick) there’s probably too much water in it. Not sure how you could get it to set, but maybe try freezing it? Making Popsicles/fudgecicles out of it?

    The only coconut creams I have ever seen come in a box (Whole Foods Market, Publix, etc.) I guess I could use that or try just chilling the can of coconut milk. I can’t wait to try this. Most vegan fudge recipes seem a lot more complicated. Thanks!

      Hi Ivy, I have never seen the boxed coconut cream–I will have to check that out! I am thinking that it’s the same thing so it will do just fine.     Is it possible to use cacao nibs instead of dairy free chips?

      Hi Hayley. Unfortunately it is not possible. Cacao nibs do not melt like the chocolate chips do, nor do they give the same texture. Sorry!

    Making this right now D: It’s in my fridge cooling! My non-vegan baker friend is demanding to know how it turns out since it doesn’t use peanut butter or dairy butter (solidifiers) and since it doesn’t require that ‘mix until a softball’ stage.

    I’ll try this, and there are (expensive) non-milk chocolate bars out there–is the Trader Joe’s definitely milk-free? (They do some great vegan items; but one of their soy cheeses does contain whey or casein, so vegan-buyers beware.)
    Also wondering: what does one need to substitute for chocolate, if anything, to make a simple, non-choc, buttery fudge?

      You could always try…and if you are a fan of white chocolate fudge, I say go for it. I do know that white vegan chocolate melts a little differently than say, Enjoy Life semi-sweet chocolate chips, so that might be tricky, but definitely test it out if you are feeling experimental πŸ™‚

    Thank you for this fabulous recipe! I made this for the first time last night! I followed the recipe exactly, with one wee change and the fudge turned out beautifully! I didn’t have a can of coconut cream handy, but I did have a can of full fat coconut milk. So I kept it in the fridge overnight and the milk turned itself into a heavy, thick cream! I scooped it out and used it for the fudge.. PERFECT AND SOOOO YUMMY! πŸ˜€

    Make sure your chocolate is also dairy free. Regular semi sweet choc chips have dairy solids in them.

    Any idea roughly how much 2c of choc is? I shall be buying bars and wonder if it would be a 100g bar for example. Is coconut cream the one you can get in cartons that is so solid its like candle wax or could you use the solid part from a can of coconut milk once refrigerated. Thanks.

      Hi Sandra! I really wish I could help you out with the cups to grams measurements but I’m afraid I don’t know πŸ™ I will say that the chocolate bar I used is a total of about 18 oz and I used almost half of it. Does that help? And coconut cream is like the candle wax description you used (I love that!)–it comes in a can already solid. Best of luck! xo

    This looks amazing. It reminds me of my childhood. My Grandmother would make fudge growing up on raining days at the cottage. She would never tell anyone the recipe, until one day I convinced her to teach me. To this day I can’t remember the proportions but I do remember it was full of brown sugar, corn syrup and butter. Now I can use this as a more cleaned up version! I love it! xo

I think of you everytime I see that bag of cacao butter in my pantry πŸ™‚ I haven’t gotten around to using it since that white chocolate episode–me thinks I overdid it over the course of 2 days. ha. And yes, you have to buy a can of coconut cream now–it’s only fair. But at least it only cost $1 πŸ™‚

    What kind of cocount cream? All I have is coconut milk (canned) and whenever I’ve seen recipes requiring coconut cream they have said to refrigerate and scoop of the top portion.

      Sorry about the confusion! I meant to say just a regular ol’ can of coconut cream. It’s in solid form as opposed to coconut milk in liquid form and comes as is when you buy it πŸ™‚ Hope that helps. Let me know if I am still not making any sense… xo

    This is my favorite thing to make! It’s so simple and really hits the spot with the chocolate and good-for-you fats! I use coconut butter/coconut cream concentrate though, coconut cream has just a bit too much water content in it. What brand do you use?

      You can always try this recipe out as a non-dairy sub for condensed milk: http://www.wikihow.com/Make-Vegan-Condensed-Milk
      The original fudge recipe that I used it from is here: http://crackersonthecouch.blogspot.com/2012/12/12-days-of-chistmas-treats-fudge.html and you can just easily replace the condensed milk for an equal measurement of the vegan kind. Does that make sense? Hope this helps…xo

    I gave this to a few people for Christmas last year and they all loved it. :3 How long does this keep in the fridge, do you think? If I make some on Sunday night, will it still be good on Thursday (and beyond)? I suppose it will, with all that fat in it… right??
