Ding Dong. Trick-or-Treat! Give me Raw Caramel Apples to eat…

Raw Caramel Apples a FUN and healthy twist to a classic treat! 

Thank you to those who have been asking about my whereabouts in the past 3 days. You know me so well to know that something must have been up for me to not be around during MoFo/and my HAL*RAW*WEEN theme. The truth is that I poorly prepared for my niece’s visit from this weekend until today. Not sure what I was thinking (apparently I wasn’t) but I’m back, friends. Thank you again for the concern–oh boy, do I just heart you!

And to show you my appreciation, I made you some Raw Caramel Apples. Sans poison, I swear  {I’m eating one right now just to prove that they are safe}.

My goodness, they are *coughing* delicious. Caramel apples *choke* are my absolute favorite for Hallowe.. *gurgle* *splat*

And I’m dead.

Just kidding.

Raw Caramel Apples

  • Total Time: 15 mins
  • Yield: 2 Caramel Apples 1x

Ingredients

Scale
  • 2 large apples
  • Date Saramel Sauce (recipe below)
  • 1/2 batch Raw Chocolate Recipe
  • 1/2 c. chopped nuts of choice
  • 2 craft sticks

For the caramel sauce:

  • 5 dates, chopped and set in boiling water for 10 minutes
  • 1 Tbsp. nondairy milk
  • 1 Tbsp. coconut oil, refined for non coconut flavor
  • 1 Tbsp. nut butter of choice
  • 1 tsp. maple or agave syrup

Instructions

  1. Drain the water from the dates. In a high speed blender, combine all ingredients for the Caramel Sauce until completely smooth. If you are having difficulties blending, simply add more nondairy milk by the teaspoon until it smooths out. Place into a bowl.
  2. Insert the craft stick into apple.
  3. Cover the apples evenly with the caramel date sauce. You don’t want globs of it because it will just fall off so gently coat it. Place in the freezer briefly to mildly firm up on the apples.
  4. Roll around in chopped nuts and drizzle with raw chocolate.
  5. Chill in the freezer for another 5-10 minutes until the apples set.

    i tried this recipe last night and sadly i was super disappointed with it. first of all, i knew i wanted to cover 2 bigger apples so i doubled the recipe, but even with it being doubled, it didn’t even reach/cover the bottom blades of my ninja blender. So no matter how many times i stopped the blender and tried to move all the ingredients around the blades it just failed repeatedly. i could have added like…..1/4 cup water to help the ingredients reach the blades better but then it would have just been too watery. so i added 1/4 cup caramel topping i already had in my fridge. it still turned out tasting fine, but i was bummed that i had to use the caramel i already had on hand. just wanted let anyone else know you may need to triple the recipe if you want it to work out in your blender.

        I got cut off, sorry! What I was trying to say is it sounds like the issue is more with your blade than the recipe. What type of blade does your Ninja have out of curiosity?

    Finding this website was fortuitous! My youngest daughter (who is 28) is a vegan who is incorporating more raw foods into her diet, since she was diagnosed with diabetes a few months ago. I wanted to get her something special for Xmas, like the cookies and things I make for everybody else in the family. The apples look wonderful and I can’t wait to make them!

    Any way of finding out the nutritional value on this & any of the other recipes ? My teenage son has been diagnosed with type 1 diabetes & I have to carb count like a mad woman now 🙂

    I used to love caramel apples until I had a pretty unfortunate situation involving a caramel apple and braces, which turned me off of them completely. The more I look at these guys (I keep scrolling up and looking at them), the more I feel that old temptation coming back. Gorgeous photos too, Cara! 🙂

    I’m relieved that you are okay. I thought maybe you went back to that Halloween superstore and got lost among all the cobwebs and stuff.

    I really should make these for the hubs. I’ve always been a fan of those caramel apples dipped in chocolate, then nuts. I may be unfeeling but I wasn’t the least bit worried about you. I just figured you’d gone on a 3 day jaunt with your latest paramour. Although I suppose your niece might count too as being one of the big loves of your life. 🙂

    Carmel apples!!! I remember these well, although I haven’t had one since I was a kid. I recently had raw caramel and it was amazing. I hope you had a nice visit with your niece.

    OK, so the first time I read this, I was sitting at my boy’s swimming lesson being a dutiful Mom, naturally, and checking e-mail on my phone. It is not a smart phone which would have allowed me to see your beautiful pictures, it’s just an old regular flip phone that barely works indoors. So I’m sitting there reading about your niece and being glad you’re not under a bus somewhere and then I got to the coughing bit and I start to snicker and then there’s the gurgling part and I got a little louder and then I got to “Splat! And I’m dead.” and I laughed so loud the Grandpa next to me got up and moved. So there you go. You’ve alienated me from the elderly population of the boy’s swim lessons. Also, these look delicious.

    Glad to hear you’re doing alright (and are still alive after that apple!). These are pure genius… I hate to say it, but I read the title and immediately jumped down to the recipe… raw caramel = amazing! Will definitely have to try it. 🙂
