Stuffed Bell Peppers

I don’t like being late. In fact, I hate it. I start to sweat, my fists tighten and my teeth clench at the thought of being late to something I have committed to. It stresses me out to say the least and gives me the biggest dose of anxiety.  Now despite this fact, for some reason, there are times when I just cannot get my act together. I apparently have horrible time management and get carried away with others things that demand my distraction. My intentions are good, I promise they are, but regardless I am notorious for being fashionably late.

Stuffed Bell Peppers - Fork & Beans

So when I was invited to a Virtual Veggie Potluck dinner today with some of my friends, I of course had to come…late. I blame it on the books my sister and friend have made me read. I have been lost in a world of fiction. Driving over here, I was sweating, tightening and clenching. Hopefully everything hasn’t already been eaten but if so, thank goodness I brought my Stuffed Red Peppers. I will just sit in the corner and eat them all by myself.

Stuffed Bell Peppers - Fork & Beans

Stuffed Bell Peppers

  • Prep Time: 10 mins
  • Cook Time: 15 mins
  • Total Time: 25 mins
  • Yield: 4 Bell Pepper Halves 1x

Ingredients

Scale
  • 2 red peppers, cut length-wise and de-gutted
  • 1/2 c. uncooked, rinsed and drained quinoa
  • 1 c. vegetable broth
  • 1 can black beans, drained
  • 1/2 medium onion, diced
  • 1 tsp. cumin
  • 1/2 tsp. ancho chile seasoning
  • 1/4 c. chopped cilantro
  • non-dairy sour cream for topping

Instructions

  1. Cook quinoa as directed on package with veggie broth for more flavor.
  2. Saute onion in skillet until soft. Add cumin and ancho chile seasoning. Cook for another minute.
  3. Add beans and cooked quinoa into onion mix until well combined.
  4. Stuff inside peppers (either you can keep the peppers raw or char them on the stove top).
  5. Top with non-dairy sour cream and cilantro

    I am like you Cara, I absolutely HATE being late. So much so, that I almost always end up places awkwardly early as a result of my fear of being late. haha
    These peppers look amazing, stuffed veggies are some of my favorite things. Always so simple and always totally satisfying.

    Everything looks so good!

    I have pretty much resigned myself to being late all the time. It’s so chronic that, once we were playing some word guessing game with The Husband’s family, and his sister gave the clue, “Lizzie and The Husband are always…” for the answer “late.” It was guessed immediately. ;p

    Oooo stuffed peppers very nice Cara – I started with dessert anyways so you are just in time 🙂

    I so dislike being late too (um hello sweaty pits)….however I always find myself running late to EVERYTHING – in my mind I think I have enough time to accomplish a list of “to do’s” before an event, but then I am sidetracked – I am notorious for being between 10- 30 minutes late for everything I attend – My Dad started telling me an event started 30 minutes before the actual start time so I would be on time 🙂 it is always a shocker when I manage to arrive before anyone else 🙂

    I have a bag of green peppers calling to me – I am pretty sure they are asking to be made into this tonight.

    bahaha..i’m always late! stuffed peppers were one of my family’s staples growing up. my mom made them with ground beef, rice, and tomato sauce. these look a million times better 😉

    Okay, first of all, I’m totally having camera envy. Your pictures have gotten even more beautiful and mouthwatering since you’ve welcomed that new toy into your life! Second, I love the cute little green casserole dish. Adorable. Finally, those stuffed bell peppers sound wonderfully savory while still being light. I know how you feel about being late, but you’re worth the wait! 🙂

      This camera is the greatest gift into my life as of late. I am so happy! But you have a fab camera and you take some seriously great pics so I wouldn’t be too envious… 🙂
      The casserole dish is fun, isn’t it? My friend gave it to me for my birthday and it couldn’t be any more perfect.

    Dont worry bout being late.. there is a thing called second and third and fourth helpings. esp with veggies.. i can make space in my tummy anytime!:) it helps if you are an hour or so late too..

    The thought of you driving to our virtual potluck and then eating your peppers in the corner because all the food was already gone seriously cracked me up! I love your dish though – stuffed peppers are a great idea to feed a group of vegetarians and vegans! I don’t think we would let you have them all to yourself anyway 😉
